Orange & Almond Cake (GF & DF)

This orange & almond cake is a simple, gluten & dairy free recipe that will keep the taste buds satisfied. This cake utilises the whole orange, including the peels, to ensure minimal waste.

Ingredients:

  • 2 navel oranges

  • 6 eggs

  • 250g caster sugar

  • 250g almond meal

  • 1 tsp baking powder

  • Flaked almonds

  • Icing sugar

  • Sage & Sun Co. Dried Orange slices

Method:

  1. Slice off the ends of both oranges.

  2. Place oranges (whole, with peels) into a large pot and cover with water. Bring to the boil on the stove for 2 hours.

  3. Keep checking on the oranges as you may need to top the pot up with water occasionally to keep them covered.

  4. After 2 hours, remove the oranges and allow to completely cool.

  5. Once cooled, chop the oranges up roughly and blitz in a blender or food processor until completely smooth.

  6. Preheat oven to 160°C fan-forced.

  7. Grease and line sides and base of a 20cm springform tin with baking paper.

  8. Beat sugar and eggs in a large bowl using a hand-held beater on high, until pale and frothy (2 minutes).

  9. Add in orange puree and stir.

  10. Add in almond meal and baking powder and stir.

  11. Pour the mixture into prepared tin and top with flaked almonds.

  12. Place in the oven and bake for 60 minutes, or until a skewer comes out with only a few crumbs.

  13. Allow to completely cool in the tin, or place in the fridge overnight.

  14. Top with icing sugar and Sage & Sun Co. Dried Orange slices for a gorgeous and delicious cake!
